Lemon Corn Waffles

Ingredients

  • 1 1/4 cups all-purpose flour, plus
  • 2 tablespoons all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup cornmeal
  • 1/4 cup corn oil or 1/4 cup vegetable oil
  • 2 cups soymilk
  • 1/4 cup soy yogurt
  • 2 lemons, juice and zest of
  • 1/4 cup sugar

Recipe

  • 1 preheat waffle iron according to the manufacturer's directions.
  • 2 sift together the flour, baking powder, baking soda, salt, and cornmeal in a large mixing bowl.
  • 3 in a med-sized bowl, mix together the oil, soy milk, yogurt, lemon juice, and sugar until well-combined.
