Hiker's Cake

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 15
  • 125 g butter
  • 1 teaspoon cocoa
  • 125 g sugar
  • 1 cup mixed fruit
  • 100 g glace red cherries
  • 1 egg, beaten
  • 250 g biscuits, crushed
  • 1 teaspoon vanilla
  • 2 cups icing sugar
  • 50 g butter
  • 1 lemon, juice and zest of

Recipe

  • 1 place butter, cocoa and mixed fruit in a saucepan and bring to the boil over a moderate heat.
  • 2 add the egg whilst whisking and boil for another two minutes.
  • 3 remove pan from the heat and add biscuits, vanilla and halved cherries.
  • 4 press mixture into a lamington tin and let cool.
  • 5 mix together the icing sugar, melted butter and lemon zest, add enough juice to make a smooth icing, spread over the slice then chill.
