Mrs. Wilkes Gingerbread With Lemon Sauce

Ingredients

  • 1 cup sugar
  • 1/2 cup crisco
  • 2 large eggs, beaten
  • 2 teaspoons baking soda
  • 1 cup buttermilk
  • 1 cup molasses
  • 2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/4 teaspoon nutmeg
  • 1 teaspoon salt
  • 3 cups flour
  • 1 cup sugar
  • 4 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 cup water
  • 1 teaspoon grated lemon zest
  • 6 tablespoons lemon juice
  • 2 tablespoons butter
  • whipped topping (optional)

Recipe

  • 1 preheat oven to 365°.
  • 2 cream the sugar and the crisco, add the eggs. dissolve the baking soda in buttermilk and add to this mixture.
  • 3 add the molasses, spices, salt and flour.
  • 4 grease and flour two loaf pans.
  • 5 bake in two 8x5-inch loaf pans for 20 minutes.
  • 6 serve with whipped cream/lemon topping.
  • 7 to prepare lemon topping:.
  • 8 combine sugar, cornstarch and salt in a pan. add the water and cook over low eat, for 5 minutes, until the mixture thickens and boils .
  • 9 remove from heat and add the lemon rind, juice and butter; stir till blended.
  • 10 cool slightly before serving.
