Mrs. Wilkes Gingerbread With Lemon Sauce

Ingredients

- 1 cup sugar
- 1/2 cup crisco
- 2 large eggs, beaten
- 2 teaspoons baking soda
- 1 cup buttermilk
- 1 cup molasses
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 1/4 teaspoon nutmeg
- 1 teaspoon salt
- 3 cups flour
- 1 cup sugar
- 4 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 cup water
- 1 teaspoon grated lemon zest
- 6 tablespoons lemon juice
- 2 tablespoons butter
- whipped topping (optional)
Recipe
- 1 preheat oven to 365°.
- 2 cream the sugar and the crisco, add the eggs. dissolve the baking soda in buttermilk and add to this mixture.
- 3 add the molasses, spices, salt and flour.
- 4 grease and flour two loaf pans.
- 5 bake in two 8x5-inch loaf pans for 20 minutes.
- 6 serve with whipped cream/lemon topping.
- 7 to prepare lemon topping:.
- 8 combine sugar, cornstarch and salt in a pan. add the water and cook over low eat, for 5 minutes, until the mixture thickens and boils .
- 9 remove from heat and add the lemon rind, juice and butter; stir till blended.
- 10 cool slightly before serving.
