Lemon Syrup Cake

Ingredients

- 185 g unsalted butter, at room temperature
- 1 1/2 cups caster sugar
- 2 teaspoons finely grated lemon rind
- 3 eggs
- 2/3 cup cream milk
- 1/4 cup lemon juice
- fresh lemon rind, stripe to decorate
- yoghurt, to serve
- fresh mint, to serve
- 1/2 cup caster sugar
- 1/4 cup water
- 1/4 cup lemon juice
Recipe
- 1 beat butter sugar and lemon rind in the bowl with electric mixer until fluffy.
- 2 add eggs one at a time stir in cream and lemon juice stir in the flour and mixed to combine.
- 3 grease 22 cm pan and spoon the cake mis into it then cook in the oven 180c for about 50 minute or use the skewer inserted to the cakes until it comes out clean.
- 4 make lemon syrup combine all ingredients and boil for 5 min on low heat and pour it to the cake in the pan.
- 5 serve with yoghurt and fresh mint -- hmmmmm yummy.
