Easy Refrigerator Lemon Cookies

Ingredients
- 1 large lemon, zest of
- 1 cup granulated sugar
- 1 cup butter, chilled and cut into pieces (2 sticks)
- 2 1/3 cups cake flour, sifted
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Recipe
- 1 process the lemon zest and sugar in a food processor until the zest is as fine as the sugar.
- 2 add the butter.
- 3 process until fluffy.
- 4 scrape down the bowl.
- 5 add the flour, baking soda and salt. process briefly until mixed.
- 6 form dough into two 1-1/2-inch-round logs and wrap each in wax paper.
- 7 refrigerate until firm.
- 8 preheat the oven to 350°.
- 9 slice each log into 1/4-inch thick cookies and place on an ungreased baking sheet. bake for 8 to 10 minutes, until golden around the edges.
