Easy Refrigerator Lemon Cookies

Total Time: 55 mins Preparation Time: 45 mins Cook Time: 10 mins

Ingredients

  • 1 large lemon, zest of
  • 1 cup granulated sugar
  • 1 cup butter, chilled and cut into pieces (2 sticks)
  • 2 1/3 cups cake flour, sifted
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Recipe

  • 1 process the lemon zest and sugar in a food processor until the zest is as fine as the sugar.
  • 2 add the butter.
  • 3 process until fluffy.
