Jelly Cakes

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 cup flour (can also use 1/2 and 1/2 wheat)
  • 2 1/2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 dash salt
  • 3/4 cup skim milk

Recipe

  • 1 mix dry ingredients together.
  • 2 add milk all at once.
  • 3 add 2 to 3 tablespoons more of milk, if needed to make batter of pancake consistency.
  • 4 spoon onto hot griddle, one serving spoon at a time.
  • 5 turn over when top is bubbly.
  • 6 serve hot with butter and jelly.
