Lusciously Lean Cheesecake

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 12
  • 1 1/2 cups crumbled reduced-fat vanilla wafers
  • 1 egg
  • 40 ounces fat free cream cheese, softened
  • 1 cup sugar (or splenda)
  • 3 tablespoons all-purpose flour
  • 2 teaspoons grated lemon peel
  • 2 teaspoons vanilla extract
  • 5 eggs
  • 1 egg yolk
  • 1/4 cup evaporated skim milk

Recipe

  • 1 combine the egg with vanilla wafer crumbs; mix well.
  • 2 press crumb mixture into a lightly greased nine-inch spring form pan.
  • 3 chill thoroughly.
  • 4 in a large mixing bowl, combine cream cheese, sugar, flour, lemon peel and vanilla extract; beat at high speed until fluffy.
  • 5 beat in the eggs and egg yolk, one at a time.
  • 6 beat in the evaporated milk.
  • 7 pour into prepared pan.
  • 8 bake at 500 degrees for 10 minutes.
  • 9 reduce the oven temperature to 250 degrees.
  • 10 bake for 50 to 60 minutes, or until cheesecake tests done.
  • 11 cool on a wire rack.
  • 12 chill for eight hours or overnight.
  • 13 remove the side of the pan.
  • 14 cut the cheesecake into wedges.
  • 15 refrigerate any leftovers.
