Easy, Easy Fruitcake

Ingredients
- Servings: 10
- 4 cups mixed dried fruit, diced if need be
- 1 cup self raising flour
- 1 (400 g) tin sweetened condensed milk
- 1/2 cup water
- 1 dash rum (optional) or 1 dash brandy (optional)
Recipe
- 1 line a deep square or round tin with baking paper.
- 2 bring paper 5 cm above edge of tin.
- 3 pre heat oven to 150 c.
- 4 place fruit and water in pot, bring to boil.
- 5 simmer oncovered for 2 minutes.
- 6 cover and cool to room temperature.
- 7 stir in condensed milk then flour and rum if using.
- 8 add lightly beaten egg and stir thoroughly.
- 9 spoon into prepared tin.
- 10 bake for 2 hours or till cooked when tested.
