Easy, Easy Fruitcake

Total Time: 2 hrs 10 mins Preparation Time: 10 mins Cook Time: 2 hrs

Ingredients

  • Servings: 10
  • 4 cups mixed dried fruit, diced if need be
  • 1 cup self raising flour
  • 1 (400 g) tin sweetened condensed milk
  • 1/2 cup water
  • 1 dash rum (optional) or 1 dash brandy (optional)

Recipe

  • 1 line a deep square or round tin with baking paper.
  • 2 bring paper 5 cm above edge of tin.
  • 3 pre heat oven to 150 c.
  • 4 place fruit and water in pot, bring to boil.
  • 5 simmer oncovered for 2 minutes.
  • 6 cover and cool to room temperature.
  • 7 stir in condensed milk then flour and rum if using.
  • 8 add lightly beaten egg and stir thoroughly.
  • 9 spoon into prepared tin.
  • 10 bake for 2 hours or till cooked when tested.
