Fresh Strawberry Cupcakes

Total Time: 42 mins Preparation Time: 20 mins Cook Time: 22 mins

Ingredients

  • 2/3 cup of fresh strawberry puree (1 carton)
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup whole milk
  • 1 cup sugar
  • 1 large egg
  • 2 large egg whites
  • 8 ounces cream cheese
  • 5 tablespoons of softend butter
  • 2 tablespoons vanilla
  • 2 cups powdered sugar
  • 2 tablespoons strawberry puree (left over from cupcakes)

Recipe

  • 1 preheat oven to 350.
  • 2 line a muffin tin with baking cups.
  • 3 cut up strawberries until thin.
  • 4 in a meduim bowl, wisk together flour, baking powder, baking soda,salt,sugar, egg, and egg whites until no chunks or eggs are seen.
  • 5 in a food prosser (or blender) chop up strawberries. (leave chunks).
  • 6 in a large bowl, put in strawberries.
  • 7 add flour mixture to strawberries.
  • 8 pour into tin cups.
