Eggnog Muffins

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1 3/4 cups eggnog
  • 1/2 cup vegetable oil
  • 1/2 cup golden raisin
  • 1/2 cup chopped pecans

Recipe

  • 1 1.in a large bowl combine first 5 ingredients.
  • 2 2.in another bowl combine egg, eggnog and oil.
  • 3 3.stir into dry ingredients just until moistened.
  • 4 4.fold in raisins and pecans.
  • 5 5.fill greased or paper-lined muffin cups 2/3 full.
  • 6 6.bake at 350 degree for 20 to 25 minutes or until toothpick comes out clean.
  • 7 7.cool for 5 minutes before removing from pans to a wire rack.
