Fresh Strawberry Cake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 1/2 cup butter
  • 1/3 cup shortening
  • 1 3/4 cups sugar
  • 1/2 cup fresh strawberries, crushed
  • 1 (6 ounce) package strawberry gelatin
  • 2 2/3 cups all-purpose flour, sifted
  • 3 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1 1/3 cups sweet milk
  • 1 teaspoon vanilla
  • 4 egg whites, stiffly beaten
  • 1 (16 ounce) box confectioners' sugar, sifted
  • 1/8 cup butter, softened
  • 1/2 cup fresh strawberries, crushed

Recipe

  • 1 cream butter, shortening, and sugar until fluffy.
  • 2 add strawberries and gelatin; beat well.
  • 3 sift together dry ingredients and add alternately with milk.
  • 4 add vanilla and beat well.
  • 5 fold in egg whites.
  • 6 turn into 3 greased and floured 9-inch cake pans.
  • 7 bake at 350 degrees for 30 to 35 minutes.
  • 8 when cake is cool, blend the confectioner's sugar, softened butter, and strawberries.
  • 9 beat thoroughly and spread between layers.
