Lighter Chocolate Cake

Ingredients
- 5 egg whites
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup cake flour (you can use a-p flour)
- 4 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoons icing sugar
- 2/3 cup cool whip
- 1 tablespoon chocolate syrup
Recipe
- 1 preheat oven to 300*. line bottom of a 8" round cake pan with parchment paper.
- 2 in a medium bowl, beat the egg whites at medium speed until frothy. slowly beat in the granulated sugar, 1 tablespoon at a time, until soft peaks form. fold in vanilla.
- 3 combine flour and 3 tablespoons cocoa powder in a small bowl. sprinkle over beaten egg whites, half at a time, gently folding in until it is just absorbed.
- 4 spoon into baking pan and smooth the top. bake 30 minutes - until top springs back when lightly pressed.
- 5 sprinkle icing sugar on a clean tea towel. turn the cake out of the pan onto the towel & peel off the parchment paper. cool completely.
- 6 topping:.
- 7 combine cool whip and chocolate syrup until blended. spread over top & sides of cake. sprinkle with remaining 1 tablespoon cocoa powder.
