Ingredients

- 1 cup sugar
- 4 eggs
- 1/2 cup boiling water
- 1/2 teaspoon salt
- 1 1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon lemon extract or 1 teaspoon vanilla
- favorite jelly
- whipped cream
Recipe
- 1 preheat oven to 400.
- 2 beat eggs and sugar until light and thick.
- 3 add flour, salt, baking powder and flavoring.
- 4 rapidly whip boiling water into batter.
- 5 pour the mixture onto a cookie sheet fitted with wax paper and sprayed with non-stick cooking spray.
- 6 bake 10-12 minutes.
- 7 turn out onto a cloth which has been ran under cold water and wrung out.
- 8 spread with your favorite flavor of jelly.
- 9 using a damp cloth, roll up the cake.
- 10 garnish with whipped cream.
