Jelly Roll

Total Time: 22 mins Preparation Time: 10 mins Cook Time: 12 mins

Ingredients

  • Servings: 8
  • 1 cup sugar
  • 4 eggs
  • 1/2 cup boiling water
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon lemon extract or 1 teaspoon vanilla
  • favorite jelly
  • whipped cream

Recipe

  • 1 preheat oven to 400.
  • 2 beat eggs and sugar until light and thick.
  • 3 add flour, salt, baking powder and flavoring.
  • 4 rapidly whip boiling water into batter.
  • 5 pour the mixture onto a cookie sheet fitted with wax paper and sprayed with non-stick cooking spray.
  • 6 bake 10-12 minutes.
  • 7 turn out onto a cloth which has been ran under cold water and wrung out.
  • 8 spread with your favorite flavor of jelly.
  • 9 using a damp cloth, roll up the cake.
  • 10 garnish with whipped cream.
