Fresh Strawberry Crumb Cake

Ingredients

- 1 cup sifted all-purpose flour
- 3/4 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 1/3 cup buttermilk
- 1/2 teaspoon vanilla
- 1/3 cup butter, melted and cooled
- 1 1/2 cups sliced fresh strawberries
- 1 cup heavy cream, whipped
- 1/2 cup firmly packed light brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon butter
Recipe
- 1 sift together flour, sugar, baking powder and soda.
- 2 beat together egg, buttermilk and vanilla.
- 3 stir in butter.
- 4 pour into flour mixture, mixing until smooth.
- 5 spread batter into a buttered 9" round cake pan.
- 6 combine crumb topping ingredients.
- 7 cover batter with sliced strawberries and sprinkle with crumb topping.
- 8 bake at 375 for 40-45 minutes.
- 9 serve warm with whipped cream.
