Fresh Strawberry Crumb Cake

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 8
  • 1 cup sifted all-purpose flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/3 cup buttermilk
  • 1/2 teaspoon vanilla
  • 1/3 cup butter, melted and cooled
  • 1 1/2 cups sliced fresh strawberries
  • 1 cup heavy cream, whipped
  • 1/2 cup firmly packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon butter

Recipe

  • 1 sift together flour, sugar, baking powder and soda.
  • 2 beat together egg, buttermilk and vanilla.
  • 3 stir in butter.
  • 4 pour into flour mixture, mixing until smooth.
  • 5 spread batter into a buttered 9" round cake pan.
  • 6 combine crumb topping ingredients.
  • 7 cover batter with sliced strawberries and sprinkle with crumb topping.
  • 8 bake at 375 for 40-45 minutes.
  • 9 serve warm with whipped cream.
