Jolly Cake

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 175 g butter
  • 175 g brown sugar
  • 1 lemon, grated zest
  • 3 eggs, beaten
  • 175 g self raising flour
  • 1/3 cup scotch whisky
  • 50 g butter
  • 175 g icing sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons honey (thick)

Recipe

  • 1 preheat the oven to 350.
  • 2 cream butter, sugar, lemon zest, and eggs.
  • 3 fold in 1/2 the flour, then the whisky & lastly remaining flour.
  • 4 spoon into two greased 18 cm round tins.
  • 5 bake 25mins.
  • 6 allow to cool on a rack.
  • 7 for icing & filling. beat together all ingredients.
  • 8 sandwich cake together with 1/2 butter cream & swirl the rest over the top.
