Eggnog Muffins

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup prepared eggnog
  • 1/2 cup dark rum
  • 5 tablespoons unsalted butter, melted
  • 1 egg, beaten to blend
  • 1/2 teaspoon grated nutmeg

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 grease (or line with paper liners) one 12-cup muffin tin.
  • 3 sift flour, sugar, baking powder and salt into large bowl.
  • 4 stir in eggnog,rum,butter,egg and nutmeg; spoon into prepared tin.
  • 5 bake until tester inserted in center comes out clean, about 20 minutes.
  • 6 cool muffins completely before serving.
