Gingerbread Cake

Ingredients

- 1 1/3 cups flour
- 3/4 teaspoon cinnamon
- 3/4 teaspoon ginger
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon allspice
- 1/2 cup firmly packed brown sugar
- 1/2 cup butter or 1/2 cup margarine
- 1/2 cup boiling water
- 1/2 cup molasses
- 1 egg, slightly beaten
Recipe
- 1 heat oven to 350°f.
- 2 grease (not oil) bottom only of 8 or 9 inch square pan.
- 3 in a large bowl, combine first 7 ingredients.
- 4 add remaining ingredients; blend well.
- 5 pour batter into prepared pan.
- 6 bake at 350°f for 30-40 minutes or until toothpick inserted in center comes out clean.
- 7 for gingerbread muffins: use 12 paper baking cups in muffin tin instead of square pan and bake at 350 for 25 to 30 minutes.
