Gingerbread Cake

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 9
  • 1 1/3 cups flour
  • 3/4 teaspoon cinnamon
  • 3/4 teaspoon ginger
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon allspice
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup butter or 1/2 cup margarine
  • 1/2 cup boiling water
  • 1/2 cup molasses
  • 1 egg, slightly beaten

Recipe

  • 1 heat oven to 350°f.
  • 2 grease (not oil) bottom only of 8 or 9 inch square pan.
  • 3 in a large bowl, combine first 7 ingredients.
  • 4 add remaining ingredients; blend well.
  • 5 pour batter into prepared pan.
  • 6 bake at 350°f for 30-40 minutes or until toothpick inserted in center comes out clean.
  • 7 for gingerbread muffins: use 12 paper baking cups in muffin tin instead of square pan and bake at 350 for 25 to 30 minutes.
