Fresh Tomato Cake

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • 1 cup dark brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon salt
  • 2 cups fresh ripe tomatoes, peeled, seeded, and chopped
  • 1/2 cup nuts, chopped
  • 1/2 cup dates, chopped
  • 1/2 cup raisins

Recipe

  • 1 cream sugar and butter.
  • 2 add eggs.
  • 3 add sifted dry ingredients, mixing well.
  • 4 stir in tomatoes, nuts, dates, and raisins.
  • 5 put into prepared 9x13 inch baking pan or bundt pan.
  • 6 bake in preheated 350 f oven for 35 minutes, or until cake tests done.
  • 7 frost with your favorite cream cheese frosting when cool.
