Coca Cola Cake

Ingredients

• 18 1/4 ounces cake mix
• 1 cup coca-cola, not diet
• 2 eggs
• 1/2 cup buttermilk
• 1/2 cup butter, melted
• 1/4 cup baking cocoa
• 1 teaspoon vanilla extract
• 1 1/2 cups miniature marshmallows
• 1/4 cup baking cocoa
• 1/2 cup butter, cut into small cubes
• 1/3 cup cola, not diet
• 4 cups confectioners' sugar
• 1 cup chopped pecans, toasted (optional)

Recipe

• 1 preheat oven to 350 degrees.
• 2 in a large mixing bowl combine cake mix, cola, buttermilk, melted butter, cocoa, and vanilla extract.
• 3 beat on medium speed for 3 minutes.
• 4 fold marshmallows into batter.
• 5 grease a 13 x 9 pan.
• 6 pour batter into pan.
• 7 bake for 35-40 minutes or until a toothpick inserted near the center comes out clean.
• 8 cool in pan on a wire rack for 15 minutes.
• 9 in the meantime, combine cocoa and butter in a saucepan.
• 10 cook over low heat until butter melts.
• 11 stir in cola and stir until blended.
• 12 bring to a boil, stirring constantly.
• 13 remove from heat and add confectioners sugar.
• 14 stir until smooth.
• 15 fold in pecans if using.
• 16 spread over cake.
• 17 let stand 20 minutes before cutting.
