Hassle Free Hotcakes

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 10
  • 1 3/4 cups self raising flour
  • 1/4 teaspoon bicarbonate of soda
  • 2 eggs
  • 1 1/4 cups milk
  • 1/3 cup caster sugar
  • 30 g soft butter

Recipe

  • 1 sift flour and bicarbonate of soda,
  • 2 make a hole in the centre of the flour,
  • 3 break eggs into large jug,
  • 4 add milk and sugar, beat with a fork until mixed.
  • 5 gradually whisk the milk mixture into the flour until smooth.
  • 6 cover the bowl with plastic wrap and put in the fridge for 30 minutes.

  • 8 fill a 1/4 cup with mixture, when butter is melted pour the batter into the pan.
  • 9 cook the hotcake for about 2 minutes or until it is just set around the edge and small bubbles have burst on the surface.
  • 10 using an egg slice, turn the hotcakes over and cook for another 2 minutes or until the other side is lightly browned.
