Grenadian Spice Cake

Ingredients

- 2 cups sifted all-purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1 1/2 cups sugar
- 1 cup unsalted butter, chilled, cut into tablespoon-size pieces
- 1 1/2 teaspoons grated lime zest
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 3 eggs
- 1/2 cup milk
Recipe
- 1 preheat oven to 350 degrees f (175 degrees c). grease a 9x5 inch loaf pan.
- 2 sift together the flour, baking powder and salt, set aside.
- 3 in a medium bowl, cream together the sugar and butter.
- 4 beat in the eggs one at a time, then stir in the lime zest, nutmeg, cinnamon and allspice.
- 5 add the dry ingredients alternately with the milk, stirring after each addition.
- 6 pour batter into the prepared pan.
- 7 bake for 75 to 90 minutes in the preheated oven, until a toothpick inserted comes out clean.
- 8 cool in the pan for 10 minutes before turning out onto a rack to cool completely.
