Maine Crab Cakes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 12 ounces fresh picked crabmeat
  • 1/2 cup breadcrumbs
  • 2 large eggs (beaten)
  • 2 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon italian parsley (chopped)
  • 1/2 teaspoon thyme
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons butter
  • 4 scallions (thinly sliced)

Recipe

  • 1 combine all ingredients except scallions.
  • 2 mix well.
  • 3 add sliced scallions and mix.
  • 4 form into eight 2-inch crab cakes.
  • 5 in a 10-inch skillet, melt butter over medium-high heat until melted.
  • 6 add crab cakes.
  • 7 cook the crab cakes for 3 to 4 minutes on each side or until golden brown.
  • 8 drain on paper toweling.
