Lime Almond Cheesecake

Ingredients
- 1/4 lb salted butter, melted
- 2 cups ground cinnamon graham crackers
- 1/4 cup sugar
- 4 (8 ounce) packages cream cheese
- 1 1/2 cups sugar
- 1 1/2 tablespoons lime juice
- 1 pinch salt
- 4 large eggs
- 2 cups sour cream
- 1/4 cup sugar
- 1 teaspoon almond extract
Recipe
- 1 press ground graham cracker crumbs into bottom of a 10" spring form pan and a 1/3 of the way up the sides.
- 2 in blender, cream the cream cheese and sugar on low.
- 3 add pinch of salt and lime juice, blend.
- 4 add eggs, one at a time, on low, to prevent to much air from getting into batter.
- 5 pour into crust.
- 6 place into pre-heated, 350 degree oven for 45 minutes.
- 7 remove from oven and let stand for 10 minutes.
- 8 mix sour cream, sugar and almond extract, and add to top of cake after 10 minutes has passed.
- 9 place in oven for 10 more minutes.
- 10 remove from oven and immediately place in the refrigerator to prevent cracking.
