Lime Almond Cheesecake

Total Time: 1 hr 30 mins Preparation Time: 25 mins Cook Time: 1 hr 5 mins

Ingredients

  • 1/4 lb salted butter, melted
  • 2 cups ground cinnamon graham crackers
  • 1/4 cup sugar
  • 4 (8 ounce) packages cream cheese
  • 1 1/2 cups sugar
  • 1 1/2 tablespoons lime juice
  • 1 pinch salt
  • 4 large eggs
  • 2 cups sour cream
  • 1/4 cup sugar
  • 1 teaspoon almond extract

Recipe

  • 1 press ground graham cracker crumbs into bottom of a 10" spring form pan and a 1/3 of the way up the sides.
  • 2 in blender, cream the cream cheese and sugar on low.
  • 3 add pinch of salt and lime juice, blend.
  • 4 add eggs, one at a time, on low, to prevent to much air from getting into batter.
  • 5 pour into crust.
  • 6 place into pre-heated, 350 degree oven for 45 minutes.
  • 7 remove from oven and let stand for 10 minutes.
  • 8 mix sour cream, sugar and almond extract, and add to top of cake after 10 minutes has passed.
  • 9 place in oven for 10 more minutes.
  • 10 remove from oven and immediately place in the refrigerator to prevent cracking.
