Matzos Sponge Cake (for Passover)

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 8 eggs, separated
  • 1 1/2 cups sugar
  • 1 cup sifted matzos cake crumbs
  • salt
  • 1/2 lemon, grated rind and juice

Recipe

  • 1 preheat oven to 350 f, a moderate oven.
  • 2 beat yolks until light.
  • 3 add sugar and beat again then add a pinch of salt, the lemon, then the matzos cake meal.
  • 4 lastly fold in the whites beaten until stiff but not dry.
  • 5 bake in 10 inch spring form 45 minutes or in two layers. we use don't use a spring form pan but we use a tube pan or bundt.
  • 6 enjoy!
