Matzos Sponge Cake (for Passover)

Ingredients
- 8 eggs, separated
- 1 1/2 cups sugar
- 1 cup sifted matzos cake crumbs
- salt
- 1/2 lemon, grated rind and juice
Recipe
- 1 preheat oven to 350 f, a moderate oven.
- 2 beat yolks until light.
- 3 add sugar and beat again then add a pinch of salt, the lemon, then the matzos cake meal.
- 4 lastly fold in the whites beaten until stiff but not dry.
- 5 bake in 10 inch spring form 45 minutes or in two layers. we use don't use a spring form pan but we use a tube pan or bundt.
